The reservation time reserves the spots while customers are booking on your website. You can change this time, which is set to a standard of 30 minutes.

Remember that your customers need time to both book and pay within the reservation time to prevent the booking from being canceled. Therefore, it can be good to have a slightly longer time (for example, at least 10 minutes).

You can change the reservation time under Settings > Bookings > Order reservation time.
